Food past time

Nyonya Curry Chicken

What I like about this curry among all curriesis that it uses many fresh herbs in Asian countries and doesn't require any dried ingredients if one don't feel like using them!

Ingredients A
Fresh Chilles - deseeded - 15pcs
Peeled Shallots - 20pcs
Peel Garlics - 5pcs
Young Ginger - 1 1/2" knob
Galangale - 3 thin slices
Fresh Turmeric - 1" knob
Shrimp Paste - 1 tbps (optional)

Ok now grind all the above with some water in a blender until a fine paste. After that sauteed with vegetable/peanut/palm oil over low flame until the oil separates and paste looks bright orange red then you add the below ingredients!

Ingredients B
Cut Chicken Pieces - 1kg
Lemongrass ( bruised ) - 3 stalks
Coconut Milk - 500ml or lesser if you prefer not too creamy
Lemon Leaves
Salt- to taste
Sugar - to taste
